I first spotted François Côté about three years ago behind the counter at Joe Beef, where he was working alongside chefs Fred Morin and David McMillan. The handsome and rather quiet chef already had a reputation for being an upcoming talent. Then about a year ago, McMillan told me Côté was leaving Joe Beef to open his own restaurant, to be called L’Impérial. I asked where it would be, and I was surprised when he responded: “Granby.”
